Ingredients

  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 4 Tbsp cocoa powder
  • 1 tsp vanilla extract
  • 3 cups shredded zucchini
  • 1 cups nuts (optional)

Instructions

  1. Beat eggs, oil and sugar. sift flour, baking soda, cinnamon, salt and cocoa. mix well.
  2. Add vanilla, zucchini and nuts. mix all together and spread on a jelly roll pan.
  3. Bake at 350 degrees for 30 minutes.
