Ingredients

  • 1 1/2 tablespoons extra virgin olive oil
  • 1/4 cup all-purpose flour
  • 4 cups skim milk
  • 1/2 cup dried porcini mushrooms, broken into small pieces
  • 1 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon freshly chopped Italian parsley

Instructions

  1. Place olive oil in a large saucepan. Heat and add flour. Cook the flour 1-2 minutes until it just begins to turn brown.
  2. Slowly whisk in milk. Bring to boil and immediately turn to low.
  3. Add porcini. Cook until thickened. Taste and add salt, pepper and parsley.
