Because I love garlic so very much, I thought I would research and share some history, benefits, and uses of the pretty white bulbs. Garlic — known to some as the stinking rose — found in many cuisines around the world to add flavor to our foods, but it has also been used as a natural medicinal ingredient for centuries, both in its fresh plant form and as a supplement. Garlic is not a seasoning; it is not even a cousin to salt and pepper. It is a bulb — that is, related to the shallot, onion, leek, and chive — and a pugnacious bulb at that.
Garlic has been used all over the world for thousands of years. Garlic was in use at the beginning of recorded history and found in Egyptian pyramids and ancient Greek temples. According to ancient myth, garlic can be used for medicinal purposes such as getting rid of toothaches, I can vouch that this actually works.
Today, garlic is used for several conditions linked to the blood system and heart, including hardening of the arteries, high cholesterol, heart attack, coronary heart disease, and hypertension. Garlic is also used for the prevention of lung, prostate, breast, stomach, rectal, and colon cancer.
What to look for in fresh garlic, try to find firm, plump bulbs with dry white or purple papery skins. Avoid bulbs with yellowing skin or bulbs that are shriveled. If the bulb feels hollow, light, or has brown spots, or those with green sprouts coming out the end, this is not fresh.
Now that we have our fresh garlic, let’s delve into some great garlic recipes. There are very few recipes we don’t add a bit of garlic, it is frequently a staple in salsas, soups, sautés and roasts.
