Ingredients

  • package Johnsonville Smoked Cheddar Pork Sausage, 1/4″ slices
  • 1 tsp cooking oil
  • 1 package Breakfast Homefries, frozen
  • 2 tbsp butter, unsalted
  • 1/2 medium white onion, diced, optional
  • 1/2 green pepper, seeded and chopped, optional
  • 1 1/2 cups mushrooms, sliced, optional
  • 6 eggs, large
  • 1/4 cup whole milk
  • salt and pepper, to taste

Instructions

  1. Add oil to skillet and heat on medium. Add frozen potatoes in single layer and cook for 15-18 minutes, turning halfway through. Once soft and golden brown, set aside and keep warm.

  2. Melt butter in same skillet over medium heat. Add sausage and cook for approximately 3-4 minutes, stirring occasionally. Set aside.

  3. If using, add vegetables to skillet and season to preference with salt and pepper. Cook on medium until mushrooms have browned and vegetables have softened, approximately 8-10 minutes.

  4. In a bowl, whisk eggs and milk, and season with salt and pepper to preference. Add sausage and potatoes back into the skillet with the vegetables and stir to combine. Add egg mixture and cook, stirring regularly, until eggs have set, approximately 2-3 minutes. Plate and serve immediately.
