Watermelon Mojito

A frozen Watermelon Mojito is the best drink of summer! An adult-beverage speckled with mint, a hint of lime, watermelon simple syrup and incredibly refreshing icy watermelon. It is dangerously delicious!

Ingredients

Scale
  • 8 cups cubed watermelon*
  • 1/2 cup fresh mint leaves + more for garnish
  • 1/2 cup fresh lime juice
  • 1 cup white rum
  • 1 cup Seltzer water**
  • lime wedges for garnish

Instructions

  1. Prepare the watermelon, by chilling the watermelon cubes for at least an hour. Place inside a blender and blend until smooth and no chunks remain.

  2. In the bottom of a large pitcher, muddle the mint using a wooden spoon (or muddling tool). Fill the pitcher halfway with ice.

  3. Pour in the watermelon juice, lime juice, and rum. Give the mixture a good stir. Top with seltzer water.

  4. Pour into individual glasses and garnish with mint and limes.

Notes

*You will need a medium sized watermelon to get 8 cups cubed.
**Use tonic water if looking for a sweeter cocktail.
